We have made The Bridgestone Guide!


We are delighted to be included for the 3rd year in a row in The Bridgestone Irish Food Guide. Here is an extract of some of the nice things John & Sally have said about us.

"Ronan Byrne is our sort of farmer. “Our ethos is based around farming with traditional breed, slow-maturing animals and selling our produce locally... One of the methods, we use is the ‘Pasture Poultry’ model, which is based around the principle of making sure our chickens, ducks, geese and turkeys go outside and eat fresh grass as part of their daily diet.”

Why is that important? Simply because the most dynamic farmers in modern agriculture all see themselves as grass farmers. As Michael Pollan wrote in his masterly The Omnivore’s Dilemma, discussing the farming practices of Joel Salatin’s Polyface Farm in the United States: “The animals come and go, but the grasses, which directly or indirectly feed all the animals, abide, and the well-being of the farm depends more than anything else on the well-being of its grass.” So, Mr Byrne is ahead of the posse when it comes to understanding grass and its impact on what we eat, and how you use it to produce wonderful food. Of course, one of the books that influenced Mr Byrne was a book on poultry by... Joel Salatin! Wheels within wheels, or maybe even corn circles within corn circles."
